How do I get my money back if I didn't use the cashier's check I purchased?

If you got a cashier's check from your account and no longer need it, you can redeposit it into your account. On the back of the check, where you'd typically sign, write "Not used for purpose intended." You can then deposit it in the branch or through mobile deposit.
